The weather the last couple of days has not been kind to us. Just as you are about to leave home for work or leave the office in the evening, and the weather changes, the skies open up and down comes the rain.
Over the weekend, I got caught in the rain. By the time I was getting home, I was drenched, recipe for a runny nose the following day.
I asked my daughters to make me some soup and they made me this amazing cabbage soup.
Cabbage is never on my list of vegetables to eat, but after finishing my bowl of soup, I changed my mind.
Serves: 6-8
Prep Time: 20 minutes
Cook Time: 40 minutes
Ready In: 1 hour
Ingredients:
?3 tablespoons olive/sunflower oil
?1 small onion, chopped
?2 cloves garlic, chopped
?1 cup water
?1 chicken cube
?Salt and pepper to taste
?½ a head of cabbage, cored and coarsely chopped
?1 can tomatoes, drained and diced
Directions:
In a large stockpot, heat oil over medium heat. Stir in the onion and garlic; cook until onion is transparent, for about 5 minutes.
Stir in water, chicken cube, salt, and pepper. Bring to a boil, then stir in cabbage. Simmer until cabbage wilts, for about 10 minutes.
Stir in tomatoes. Return to a boil, then simmer 15 to 30 minutes, stirring often.
Serve hot.
